<p></strong>1-Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside. Reserve 2 tablespoons bacon fat.<br />
2-Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot -water for 10 to 12 minutes. Remove from hot water, cool, peel and cut in wedges.<br />
3-Return 2 tablespoons bacon fat to skillet, stir in sugar, vinegar, water and salt. Keep warm.<br />
4-Wash and remove stems from spinach, dry thoroughly and break into pieces in salad bowl. Pour warm dressing over and toss until coated.<br />
5-Top salad with mushrooms and bacon, garnish with egg.</p>

<p style="text-align: center;">Cut re-hydrated dried apricots into thin strips (or seed and quarter the fresh apricots). In a medium bowl, gently toss the tomato halves, onion and cucumber with the vinaigrette. Drain most of the vinaigrette into a large salad bowl.*</p>
<p style="text-align: center;">Add the romaine and spring mix to the vinaigrette in the large bowl with the apricot pieces, feta and bacon, if using. Toss until thoroughly coated. Arrange tomatoes, onion and cucumber on top of salad. Sprinkle with toasted walnuts and serve immediately.</p>

The preparation takes 35 minutes, place sweet potatoes in a large saucepan and add cold water to cover. Cover and bring to a boil over high heat. Reduce heat to medium-low and simmer until potatoes are fork-tender, 25 to 35 minutes. Drain in a colander and rinse under cold running water. Let stand until cool enough to handle.</p>
<p style="text-align: center;">In a salad bowl, blend yogurt, mayonnaise, chutney, orange juice concentrate, curry powder, cumin, pepper, and salt.</p>
<p style="text-align: center;">Peel sweet potatoes and cut into 1/2&#8243; chunks. Add to dressing along with celery and toss gently until well coated. Sprinkle with pecans and serve.</p>

</strong>Preheat the broiler. Rub chicken with oregano, paprika, and 1/4 tsp of salt. Broil 6&#8243; from heat for 4 minutes per side, or until chicken is cooked through.</p>
<p>Transfer to cutting board and when cool enough to handle, slice on diagonal into 3/4&#8243;-wide strips.</p>
<p>In large bowl, whisk together remaining 1/4 tsp salt, lemon zest, lemon juice, and oil. Add chicken, cucumber, tomatoes, celery, and mint, and toss to combine. Serve salad topped with feta cheese and olives.</p>

<p style="text-align: center;">Preheat broiler. Arrange bread on a baking sheet and broil 3&#8243; to 4&#8243; from heat for 1 minute on each side, or until lightly toasted. Remove from oven and let cool slightly.</p>
<p style="text-align: center;">Then rub each slice of bread with a cut clove of garlic and cut bread slices in half crosswise.</p>

Prep Time: 40 minutes</p>
<p style="text-align: center;">In a medium heatproof bowl, combine bulgur and boiling water. Let stand 30 minutes, then drain in a fine-mesh sieve, pressing out excess water.</p>
<p style="text-align: center;">Meanwhile, in a small bowl, combine apricots and orange juice, and let stand while bulgur is soaking.</p>
<p style="text-align: center;">In a small saucepan, bring chicken broth to a boil over high heat. Add chicken, reduce heat to medium and simmer, stirring frequently, until chicken is cooked through, three to five minutes. With slotted spoon, transfer chicken to a plate and cover loosely so it doesn&#8217;t dry out.</p>
<p style="text-align: center;">Increase heat under saucepan to high and cook broth until it is caramel-colored, syrupy, and reduced to about 1 TB, about 10 minutes. Set reduced broth aside.</p>
<p style="text-align: center;">In a large bowl, combine drained bulgur, the apricots and their soaking liquid, the chicken, carrots, parsley, and scallions. Toss to mix well.</p>
<p style="text-align: center;">In a small bowl or cup, whisk reduced broth with lemon juice, olive oil, pepper, and salt. Pour dressing over salad and toss to mix. Mound salad on a platter and surround with sliced tomatoes.</p>
